Food quality

 

The two main areas of the Compendium containing information on food quality (indicators and production and processing factors that affect it) are the datasheets on food product groups and in the archive of documents in the Library.


Food Product Group datasheets

There are ten food product group datasheets that have been added to the Compendium as part of the Food Safety and Quality (FSQ) enhancement:

Poultry eggs

Cattle meat

Goat meat

Pig meat

Poultry meat

Sheep meat

Buffalo milk

Cattle milk

Goat milk

Sheep milk

As well as an overview of the economic importance and trends in consumption rates of these food product groups, each datasheet, contains a text section on Food Quality (available by selecting this heading from the 'Information' drop-down menu of the open datasheet), which discusses the nutritional benefits of these foods, and aspects of husbandry and other factors that affect the quality of the harvested product(s). In addition, a section on Quality Assurance discusses examples of quality assurance schemes specific to the particular food product group; these might include assurance of food safety, particular husbandry methods or geographical origin. Usually, examples have been chosen from the country in which the author of the datasheet was based at the time of writing. Some authors have also chosen to add notes on factors affecting quality of the finished product at selected levels of the food management chain in their completion of the table describing critical control points and food safety interventions (select 'Critical Control Points and Interventions' from the 'Information' drop-down menu of the open datasheet).


Library content relating to food quality

The Library archive already contained a number of documents relating to food quality and safety before the FSQ enhancement was implemented in the Animal Health and Production Compendium, and a further 150 items have been added to the Library as part of this particular enhancement. 

A considerable number of documents can be found linked to the datasheets mentioned above by clicking the 'Library documents' link from the cover page, or by selecting 'Related Library Documents' from the datasheet 'Information' drop-down menu. Many of these will relate to food quality, although some will relate to aspects of food safety or food contamination.

Further library content on food quality can be found by interrogating the Library directly. To browse the Library, click on the Library button on the right hand side of the Home page of the Compendium.

Browsing by subject category

On opening the Library interface, click on the '+' sign to the left of the 'by Topic' folder and, similarly, open the folder entitled 'Food safety and quality'. Browse the contents by clicking on document icons in order to view the metadata associated with particular items in the right hand screen of the interface, or by opening further sub-folders to view further sub-category collections of documents.

Using keywords to search for content

Alternatively to browsing the Library, documents can be retrieved by using keyword-assisted searching, either by using the keyword Index or the Search dialogue input box. Both these facilities are available in the Library interface by clicking the appropriate tag at the top of the viewing box on the left hand side of the interface window. Every document in the Library has been indexed using keywords from the CAB Thesaurus, a controlled vocabulary for agricultural, human health and veterinary sciences. Try using, for example, the keywords, 'food quality' or 'food safety'.
